Ingredients
- 1/2 free-range chicken (about 800 grams)
- 10 grams ginger leaves
- 2/3 cup coconut water
- 56 grams chicken seasoning powder

Step 1: To make delicious chicken, it is important to choose a free-range chicken with firm, sweet meat that is not spoiled. Choose a young chicken that is not too old, as the meat will be tough, and not too young, as the meat will not be thick and firm, and will produce a lot of water when cooked. Free-range chicken is much tastier than industrial chicken!
Step 2: First, when you bring the chicken home, wash it thoroughly with salt and cold water, rub salt on the chicken’s body, then rinse it again with water mixed with white wine or vinegar until it is clean. You can choose to buy wings, thighs, or breasts according to your preference.
Step 3: Then, use a clean iron knife and cutting board to chop the chicken into bite-sized pieces. Note that you should chop them slightly larger because the chicken will shrink when cooked. Then, put the chicken in a large bowl and marinate it with chicken seasoning powder, mix well, and let it sit for 15-20 minutes to absorb the flavor.
Step 4: Rinse the ginger leaves, cut them into pieces about 2-3 cm long, and put them in a strainer to drain.
Step 5: Heat a pot on the stove, add a little cooking oil and heat it up, then pour the chicken into the pot and stir well. When the chicken has been cooked for about 5 minutes, add the coconut water to the pot, simmer over low heat until the water is thick and blends into the chicken.
